
I am a breakfast/brunch for dinner type of person and I dare you not to enjoy a great breakfast in the evening. Since Halloween is right around the corner, keep it spooky at night with these delicious chocolate waffles and smashed blueberry. Make it extra spooky with some eyeball sprinkles.
Pretty simple recipe with a few tweaks but very delicious with some extra.
Chocolate Waffles
1 1/2 cups of flour
3 teaspoons of cocoa powder
1/2 cup sugar
1 cup heavy cream
2 large eggs
1 teaspoon vanilla
4 tablespoons butter
or the cheat version
2 cups of Bisquick
2 cups of milk
3 teaspoons of cocoa powder
2 tbsp vegetable oil
1 egg
Mix all the ingredients together to ensure it is fully blended. Should you want to make the waffles a little darker add some more cocoa powder.
Spray your waffle maker with nonstick spray and add your batter - I used a mini waffle maker to get the job done and it works perfectly.
Continue to make your single waffles until you make enough for a good stack.
For Blueberry Smash Topping
1 cup of blueberries
1 cup of water
1/2 cup of sugar
1 teaspoon of cornstarch
1/2 teaspoon of vanilla
Slowly begin to boil water and blueberries - you will see the blueberries begin to break apart
Add sugar and vanilla
Continue to allow to boil
Mix your cornstarch with a little water until it dissolves
Add the cornstarch to the blueberry mixture
Stir, stir, stir
Remove from heat and do a final stir to make sure everything is blended

To plate:
Grab a rectangular plate...I love a plain white plate.
Drizzle some of your blueberry sauce on the bottom of the plate (gives the idea of a Halloween splatter)
Begin to layer the waffles on top of the blueberry sauce. Top with whipped cream and strawberries or more blueberries. Add a few eyeball sprinkles for some spookiness. Serve on Halloween night while watching some spooky movies.
